Heat two tablespoons of olive oil and fry the shiitake. Put them aside.
Prepare the vegetable sausages according to the instructions on the package.
Cut the bok choy and carrot with a julliëne peeler.
Fry the cauliflower rice on high heat for 1 minute. Add the carrot, bok choy and shiitake and fry for another 2 minutes.
Flavor the cauliflower rice with the teriyaki sauce, rice vinegar, sesame oil and coriander.
Serve the rice with the vegetable sausages and the unsalted cashews.
