Couscous salad with Ras el Hanout, goats cheese, almonds and vegetable mini sausages

  • 1 package &samhoud vegetable sausages mini's (available at PLUS & Picnic)
  • 200g couscous
  • 1 tsp Ras el Hanout herbs
  • 2 tbsp olive oil
  • salt and pepper
  • 1 organic lemon
  • 50g almonds
  • 4 tomatoes
  • 20g flat leaved parsley
  • 4 dried apricots
  • 50g of green olives without seeds
  • 100g goat cheese
  1. Prepare the couscous as described on the package.
  2. Mix Ras el Hanout, oil, salt, pepper, the grated zest of half a lemon and add this to the couscous.
  3. Prepare the vegetable mini sausages as described on the package.
  4. Chop the almonds and parsley, cut the tomatoes into small cubes and cut the apricots into strips. Mix this with the couscous and add salt and pepper to season the couscous.
  5. Finally, add the goats cheese to the couscous. Serve on a large plate with the vegetable mini sausages.
